In a large saucepan heat the water, vinegar, soy sauce, vegetable stock, and ginger. Bring to a boil; reduce-the heat. Cut the bok choy stems, reserving the leaves for later use. Stir in the bok choy sterns and green onions, and simmer for 15 minutes. Stir in the bok choy leaves and mushrooms. Cook until the leaves are just wilted.
