Here's my version. Most recipes use more tahini, but I think it's

better (less bitter) with this balance. You can add more garlic if you

like it really strong, or use just one clove for a mild version. The

lemon juice is another thing to adjust to taste. I like mine pretty

lemony. Add more or less water and process for more or less time to

make it the texture you like. I used to like mine chunky and thick,

but now I prefer it smoother and " fluffier " . The cayenne adds a nice

kick if you like that sort of thing!

 

(The spelling is usually " hummus " in the U.S., but you sometimes see

other versions, since the name wasn't originally written in Roman

characters.)

Hummus

Amount Measure Ingredient Preparation Method

1 15 oz can garbanzo beans (chickpeas)

2 cloves garlic chopped

2 tablespoons lemon juice freshly squeezed

2 tablespoons tahini (sesame butter)

2 teaspoons salt or to taste

water to thin mixture

cayenne to taste, optional

olive oil extra virgin

 

Place all ingredients into food processor workbowl, process until

smooth. Add water as desired to smooth texture. Spoon into a bowl -

pour on a little olive oil and sprinkle with cayenne if desired. You

may also dress bowl with chopped parsley (fresh or dried) and a little

paprika.

 

Serve hummus with pita bread, raw vegetables (baby carrots or carrot

sticks, cucumber slices), or use as a sandwich spread, especially in

wraps.

 

One wrap suggestion: spread Thin Thin wrap with 1/2 cup hummus, spread

on 2-3 lettuce leaves, 1/2 cup shredded carrots, and about 2

tablespoons chopped black or green olives. Roll and eat! (Thin Thins

are a brand of " wrap " bread, like Lavash.)
