Guest guest Posted January 16, 2004 Report Share Posted January 16, 2004 * Exported from MasterCook * Broccoli Almond Soup Recipe By :Sondra McCaffrey* Serving Size : 14 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 cups water 2 cups diced yellow onion 1 1/4 cups thinly sliced raw almonds -- (or blanched whole raw almonds) -- Divided: 2 cups thinly sliced leafy celery -- (including leaves) 2 pounds broccoli -- (divided: 4 cups sliced stems and 6 cups bite-sized flowerettes) 1/2 cup tamari soy sauce 3 large cloves garlic -- pressed or minced 2 teaspoons Spike salt free seasoning 4 tablespoons butter or margarine 1 tablespoon crumbled oregano 1 teaspoon crumbled basil Easy. A simple to make soup, for broccoli lovers. COOKING TIME: 45 min. MAKES: 3 1/2 quarts. 1. In a 4 1/2- or 5-quart pot, bring to a boil: water, onion, 1 cup of the almonds (reserve 1/4 cup for garnish), and celery. Simmer, covered, for 20 minutes, or until onions are tender. 2. Meanwhile prepare broccoli. Cut off and discard woody sterns. Thinly slice remaining sterns. (If stems are wide you may want to chop them into still smaller pieces.) Break flowerettes into very small, bite-sized pieces, and set aside for later. When onions are tender, add the chopped broccoli stems, tamari, garlic, Spike, butter, oregano, and basil. Simmer, covered, for 10 minutes. 3. Add reserved flowerettes, and simmer 5-10 minutes, or until flowerettes are barely tender and bright green. If a thinner soup is desired, add 1-2 cups water. Adjust seasonings to taste. Serve garnished with reserved almonds.
