I make mine out of russet potatoes, margerine, salt, and water. What about roasted potatoes (roasted red pots, lemon, bread crumbs, butter sauce) I know they sell frozen varieties (like in tv dinners or boston market), but want to know if you have to put any additives in them to keep them safe. Potatoes that lack oil of some kind don't freeze very well. but your mashed potatoes have margarine so they should freeze fine. I freeze in thick mil plastic freezer bags, flat, getting as much air out as possible. i've no luck with baked potatoes until they are double baked with oil again -- in the form of butter and cheese. those i double wrap. but i've not done that in a long time. so i imagine that roasted potatoes would be okay with the olive oil etc. Oil's the key. i know shelf life is longer (2 to 3 months) but i usually don't keep stuff in the freezer for more than about 30 days.
