Guest guest
Easy - Pizza Pasta (with all different sauces) Risotto w/wild mushrooms salads w/protein on top (hard-boiled eggs for one) Our big favorite is pasta with marinara or aglio e olio and my Garlic Herb Bubble Loaf. I have a request almost every week to have this with dinner. It is great with soup too or anything that makes a lot of sauce. Guest guest
These lists of everyday foods raise a question. Is it possible to eat a lower-carb food plan and be a vegetarian? I'm not on a low-carb diet, but I'm diabetic and I'm supposed to limit my carbs to 75 grams per meal. Risa's list, especially, is loaded with things that make my blood sugar go bananas. I only wish I could eat like that! We eat lots of tofu and lots of veggies. > > Risa's list, especially, is loaded with things that make my blood sugar > go bananas. I only wish I could eat like that! I haven't found a special diet that couldn't be taken care of as a vegan, and I was a caterer for a while, so I've seen a lot of special requests. serene -- People are always blaming their circumstances for what they are. Guest guest
For us it's usually Indian food (our favorite, and I've taken a series of Veg Indian cooking classes), but lately I've been doing a lot of soup and bread dinners. I pulled out the crock pot and the bread machine (although I've been doing a lot of non-machine breads). I also use my pressure cooker to make beans or bean/lentil/split pea soups quickly if I don't think to start them ahead of time. I know that I probably " should " be eating more salads as well, but I really don't like cold food in the winter. I just use a lot of veggies in the soups. It's a vegan diet (though you can opt to include small bits of meat), and grains and starchy vegetables (like potatoes) are limited. I don't have diabetes, but it's worked wonders for my health.
