Guest guest Posted January 22, 2004 Report Share Posted January 22, 2004 A friend of mine sent me a whole box of foodie goodies and in it was a food section from her local newspaper with a piece on restaurants and soups they are making. This one came from the Moosewood Restaurant in Ithaca, NY - also was printed in their book Moosewood Restaurant Celebrates - * Exported from MasterCook * Curried Squash and Apple Soup Recipe By : Moosewood Restaurant Celebrates Serving Size : 6 Preparation Time :0:00 Categories : Rc2 Restaurant Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Soup: 2 cups onions -- hopped 2 tbsp butter -- or vegetable oil 1 tbsp cumin seeds 2 tsp coriander seeds 1 tsp salt 6 cups butternut squash -- peel/seed/coarse cho 2 cups apples -- peel/core/chop 2 cups sweet potatoes -- peel/coarsely chop 4 cups water Topping: 1 tbsp garlic -- minced 1 tbsp vegetable oil 10 oz fresh spinach -- rinsed & chopped OR 10 oz mustard greens -- rinsed & chopped In large nonreactive soup pot, saute the onions in the butter or oil until soft and translucent, about 10 min. In small dry skillet, toast the cumin and coriander seeds on low heat for 3-4 min or until aromatic and lightly browned. Cool for a few minutes and grind to a powder. Add the ground spices, salt, squash, apples, sweet potatoes, and water to the onions. Bring to a boil, then lower the heat, cover, and simmer on low heat for about 30 min, until all of the ingredients are thoroughly cooked and tender. Meanwhile, in a large skillet, saute the garlic in the oil for about 1 min on MED heat, stirring constantly, until soft and just golden. Add the greens and saute on HIGH heat until the water evaporates and the greens wilt. Remove from the heat and set aside. Puree the soup in small batches in a blender until smooth, adding 1/4 cup of water if the soup is thicker than you'd like.
