Mother's Barley | Oriental Garden Pilaf

Amount Measure Ingredient -- Preparation Method

1 1/3 cups single strength vegetable broth

2/3 cup MOTHER'S Quick Cooking Barley -- uncooked

1 tablespoon vegetable oil

1/2 cup thinly sliced carrots

1/2 cup thinly sliced celery

1/2 cup sliced mushrooms

1/4 cup sliced green onions

1 clove garlic -- minced

1 tablespoon soy sauce -- (1 to 2)

 

1. In medium saucepan, bring broth to a boil. Stir in barley; reduce heat.

Cover; simmer 10 to 12 minutes or until tender.

 

2. In large skillet, heat oil. Cook carrots, celery and garlic over

medium-high heat for 2 to 3 minutes. Add mushrooms and green onions; continue

cooking 1 minute.

 

3. Add cooked barley and soy sauce; mix well. Continue cooking over medium

heat until heated through.
