Guest guest Posted January 23, 2004 Report Share Posted January 23, 2004 Barbara, the biggest key to being vegetarian or vegan while tending to the diabetic issues will be to test, test, test...if your 75 grams of carbs are primarily grain based you may have problems on the veggie diet while trying to keep your BG levels down...however, if the bulk of your carbs come from vegetables you will probably have a lot more latitude. I tend to eat about 100 - 150 gms of carbs a day due to my diabetes...most of these carbs are in the form of legumes or vegetables. I can eat some grains ok but a single forkful of rice will send my BG levels soaring. You may be able to eat rice but have problems with fruit or legumes...that is why testing is so important. Keep your food diary...test regularly and then you will find out how to allot your carbs and maintain you BG levels at an acceptable level. You will find your stride and will be able to eat a healthy, life supporting diet. BTW, the is a list for diabetic vegetarians on . It isn't very active but if we get more members perhaps it will be.
