Greek Feta Biscuits

2 cups flour

3/4 cup milk

1 egg -- beaten

1/2 cup feta cheese -- rinsed and crumbled

1/2 tsp. salt

3 tsp. baking powder

6 tbsp. butter -- (6 to 7)

1 tbsp. sugar

 

Sift flour, salt, baking powder and sugar into large bowl. Quickly cut butter

into mixture using a pastry blender, until the mixture resembles coarse oatmeal.

Pour in the milk, add cheese, and stir to make a soft dough (about 30 seconds).

Knead quickly and gently for about 30 more seconds on a lightly floured board.

Roll out with a floured rolling pin to about 1/2 " thick. Cut dough into rounds

about 2 " wide. Brush tops w/egg.

 

Place biscuits on greased cookie sheet. If you like them high, soft and golden,

place them touching each other. If you like them neat, trim, and browned all

over, don't put them too close together.

 

Bake in preheated 425°F oven for about 15 to 20 minutes or until lightly

browned.

 

Yield: about 3 dozen
