summer beans and couscous salad

not sure why it's called " summer. " Most of these veggies are fresh in spring.

Summer Beans and Couscous Salad

1 cup couscous (6 oz)

1 cup chopped green beans (4 oz)

1 cup chopped fresh fava beans (4 oz) -- optional

1 cup shelled fresh peas (4 oz)

1 cup fresh sugar snaps peas (4 oz) -- trimmed

2 unwaxed lemons -- grated zest and juice

a few strands of zest for decoration

1/3 cup olive oil

2 teaspoons Spanish sweet paprika

1 garlic clove -- chopped

sea salt

 

A great, fresh summer dish. It's full of fresh flavors and looks bright and

colorful. Recipe from Fran Warde.

 

TIP To shell fava beans, split the pod and then peel back the membrane or peel

on each bean. Big beans need to be peeled.

 

1. Put the couscous in a bowl, cover with boiling water, mix well, cover and let

stand for 10 minutes until swollen. [Ratio: 1 to 1 1/2 cups water to 1 cup

couscous.]

 

2. Bring a large saucepan of water to a boil, then add the green beans and fava

beans, if using, and cook for 5 minutes. Add the green peas and snap peas and

cook for a further 3 minutes. Drain and refresh under cold running water until

the vegetable are cold (this retains the bright color).

 

3. Drain the couscous. Transfer to a large bowl and add the beans and peas,

lemon zest and juice, olive oil, paprika, garlic, and salt. Mix well, then

serve.
