1 large onion -- peeled, chopped

1 large green pepper -- chopped

2 cloves garlic -- minced

28 ounces canned chopped tomatoes -- undrained

1 teaspoon beef bouillon granules

or vegetable bouillon cube

1 tablespoon hot chili powder

2 teaspoons cumin powder

1/8 teaspoon cayenne pepper -- or to taste

32 ounces canned black beans -- undrained

1 fresh jalapeno pepper -- seeded and minced

1/2 cup bulgur wheat

ACCOMPANIMENTS:

baked potatoes or

brown rice

 

From the Flour Garden, Ltd, Cafe and kitchen store, 900 South Telegraph, Monroe,

MI 48161. Famous for homemade soups, sandwiches, salads.

 

1. Place all of the ingredients in a slow cooker and stir well. Turn on low and

cook for 6 to 7 hours. Serve over a baked potato or whole-grain brown rice.

 

Cook's note: This recipe can be made on the stove if you don't have a slow

cooker. Cook over low heat and stir periodically to prevent sticking.

 

Makes about 7 cups; analysis per 1-cup serving.
