Hi all,

 

I found this online (see the credits below) and had to have it for my Make Me

cookbook. Maybe some of you love pinto beans, too. :) MC says 2 grams fat.

[Pinto] Bean Burgers

Amount Measure Ingredient -- Preparation Method

1/2 cup green onion -- minced

1 1/2 tablespoons garlic -- minced

2 tablespoons dry white wine -- or vegetable broth

29 ounces pinto beans -- canned, drained

3/4 cup cracker meal

2 whole egg whites

1/2 cup chopped parsley

2 tablespoons seasoned rice vinegar

1/2 teaspoon Spike seasoning powder*

 

Makes 6 (5-inch) burgers

 

Heat the oven to 350.

 

Braise the onions and garlic in the white wine until soft.

 

In a medium bowl, combine the sauteed onions and garlic, beans, cracker meal,

egg whites, parsley, vinegar, and seasoning powder. Mash well with a fork or

potato masher until blended but not entirely smooth.

 

On a parchment-lined nonstick baking sheet, drop the mixture by 1/2-cup amounts

and flatten gently with a spoon to form 6 (5-inch) burgers.

 

Bake for 25 minutes, or until set and beginning to brown lightly. Serve hot.

 

Serving Ideas: Serve on a roll or with salsa and yogurt or sour cream.

 

*Spike found in health food stores (if not available substitute another

herb-blend).
