I just made half a batch and I'm having a hard time staying out of it. * Exported from MasterCook * Tofu Mayonnaise Recipe By :Mollie Katzen Serving Size : 0 Preparation Time :0:00 Categories : Tofu & Tempeh Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 20 ounces silken tofu -- (two 10-oz boxes) (soft or firm) 2 small cloves garlic -- minced 2 tablespoons cider vinegar 1 teaspoon salt 2 teaspoons dry mustard -- optional 1. Place all ingredients in a blender, and whip until smooth. (You might need to do this in two batches.) 2. Transfer to a container with a tight fitting lid, cover, and refrigerate until use. (It will keep for up to 5 days.) Mollie's notes: Cholesterol- and oil-free, this tastes surprisingly like egg mayonnaise. The big test came when I fed this to several different tofu-phobic mayonnaise aficionados, and they loved it. Note: Silken tofu is an ultra-smooth soybean curd that comes in little vacuum-packed boxes. It is sold in natural food stores and in many supermarkets. Brenda's notes: I only had about 10 ounces of Mori-Nu's Silken firm tofu on hand, so I put that into the blender and then added about 3 cloves of garlic (we like garlic), drizzled in some cider vinegar, sprinkles of salt and dry mustard to taste... and then I went crazy. This stuff is GOOD!!! I've been dipping pretzels in it ever since. It reminds me very much of my favorite deli's dip: cream cheese, sour cream, artichoke heart, green onion -- they sell it (with all it's saturated fat and calories) for $6.99 a pound! I am going to now have all the darned dip I want for cheap and way less unhealthy -- for one thing, the bad fat is minimal in this. I'm so excited about this recipe!! (And I've always been tofu-phobic..but not anymore!)
