Guest guest Posted February 28, 2004 Report Share Posted February 28, 2004 * Exported from MasterCook * Split Pea Soup Recipe By :Mollie Katzen Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes Soups & Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups split peas 7 cups water 1 bay leaf 2 teaspoons salt 1 cup onion -- minced 3 cloves garlic -- minced 1 cup celery -- minced 1 medium potato -- thinly sliced 1/4 teaspoon dry mustard 1/4 teaspoon dried thyme 3 tablespoons vinegar 1 cup chopped tomatoes 1/4 cup fresh parsley -- chopped Simmer split peas, water, bay leaf, and salt 3-4 hours. Saute in 2 tablespoons oil the onion, garlic, celery, potato and carrots. Add to split peas. 15 minutes before serving add mustard and thyme. Just before serving add the vinegar, tomatoes and parsley.
