Split Pea Soup

Amount Measure Ingredient -- Preparation Method

2 cups split peas

2 1/2 quarts water

2 onions

2 carrots

2 stalks celery

2 sprigs parsley

2 sprigs dill

1/2 cup wheat berries (or barley)

2 1/2 teaspoons salt

1/4 teaspoon pepper

 

Put split peas in a pot with water to more than cover and boil several

minutes. Let stand several hours or overnight.

 

Chop carrots and celery in food processor. Combine with peas, herbs, wheat

berries and water ina large pot and simmer three or more hours till peas

start to dissolve. Add salt and pepper and cook a few minutes longer.

Per Serving: 156 Calories; 1g Fat (3.6% calories from fat); 11g Protein;

29g Carbohydrate; 12g Dietary Fiber; 0mg Cholesterol; 567mg

Sodium. Exchanges: 1 1/2 Grain(Starch); 1/2 Lean Meat; 1 Vegetable; 0 Fat.

 

NOTES : This soup thickens on standing. Add water as necessary when

reheating. If made in a pressure cooker, you don't need to soak the peas

first, and cooking time will be much shorter. (Unfortunately, I don't own

a pressure cooker.)
