A delightful soup. His original recipe AND a photo of my result on my website: <http://home.earthlink.net/~kitpath/> Quick soaking beans for soup or salad offers a chance to boost the flavor. Just add seasoning (no salt!) to the soaking water. For this soup, we added onion powder and Mrs. Dash's Original Blend. The beans were recipe ready in under 90 minutes. Pre-seasoned, they contribute rather than absorb the subtle flavors of parsnip, cardamom, cumin and red pepper. The gremolata isn't absolutely necessary but it can make your heart sing. With it, the soup did not need additional salt and pepper. Very good flavors for 3 hours. Makes two generous servings. Cover with water (about 2 cups). Season with onion powder and salt free vegetable flakes such as Mrs Dash. Bring water to a boil. Boil for 5 minutes. Cover. Turn off the heat. Soak for 1 hour. Drain; rinse. Set aside to drain. 2. While the beans soak, dissolve the bouillon cube in the hot water. Set aside. 3. SOUP: Melt the butter in a 3-quart sauce pan over a medium heat; add the onions and garlic, and saute for 4-5 minutes, until softened. 4. Add the parsnip and red pepper flakes; saute for 1 to 2 minutes. 5. Add the cardamon, cumin, salt and pepper. Stir to blend and warm the spices. Deglaze with water. Add the tomatoes, dissolved bouillon and beans. Bring to a boil; boil 1 minute. Reduce the heat and simmer for 1 to 1 1/2 hours, or until the beans are tender. Mash some of the beans to thicken the soup. 6. For the gremolata, about 20 to 30 minutes before mealtime, mix all the ingredients together in a bowl. 7.
