Cooking wine doesn't taste good to drink- I think it has salt added. Sometimes I add flavors that are close or might be interesting. Just a little. If it says 1/2 cup dry white wine, I might add 2 tbs lemon juice. For a fruity white -- try ginger ale or a little orange or grapefruit juice. For the reds -- sometimes a jelly works. currant plum lingonberry etc. Cranberry juice? Just to give a a little extra something. For the nonchicken soup, I'd probably add citrus. Or pear juice... Or apple juice, or pale ale. He admits that he had let alcohol take over his life and so he stopped drinking. - Whateve you do, don't use the non-alcoholic cooking wines available at the grocery store.
