Non-chicken soup

Thanks for the suggestions for wine substitutes. I do not use wine because

of the alcohol and the sulfites which is in all wines, as well as most

non-alcoholic wines and grape juices. Several people have suggested Imagine

brand

non-chicken broth, but I want to make the soup for Passover, and I doubt that

the

ingredients are kosher for Passover (they are kosher all year round, but

Passover is different), but I will check either on their website, or the next

time

I am at Trader Joe's. I did try Imagine's portobello mushroom creamy

non-dairy soup, and I have never tasted anything so horrible, I returned it to

the

store.

 

Actually, Whole Foods makes a decent non-chicken broth powder, but it is not

kosher for Passover.

 

So I will try some of the recipes that I have, probably combining all of them

to get the most flavor from the most vegetables. I also use mixed dried

vegetables ground in my small food processor as a substitute for broth powder,

since it is difficult to find a broth powder with totally acceptable

ingredients,

most notably without MSG.

We have both the Imagine and the Pacific Foods brands of " chicken " broth and

veg broth in the pantry right now. All bought on sale at different times.

One brand we like quite a bit better than the other...I just can't remember

which one! Those of you who have tried both, what do you think?
