Hi Desiree,

 

Could I suggest that maybe you make a large quantity of brown rice ahead of

time, then add your favorite veggies, tofu, seasonings, etc. It may be that

you can steam the veggies ahead of time and saute' the tofu in onion and

garlic and put that in a separate container. You could put it all together

sometime during the day. You might also add crushed tomatoes with basil or

diced tomatoes, add some chopped up cabbage. The great thing about crock

pot cooking or any cooking is that you can be as creative as you want to be

and there are so many choices to put together. You could also substitute

barley, quinoa, or wheat or rye berries to cook ahead of time and add

ingredients to. You could just make a pasta salad ahead of time with pasta

that is high protein. You can cook the grain ahead of time, and steam the

veggies just a little ahead of time, then add whatever salad dressing, (I

like to used yogurt, and yes there is soy yogurt, and some type of

mayonnaise, many types for a dressing, sort of half and half, but do it to

your taste) then add chives, or chopped fresh green onion, basil, or any

types of seasonings you wish. Add baby carrots and just have fun!
