How about a roasted vegetable and goat cheese nepolian with a red pepper coulis? If is has to be vegan..take out the goat cheese and use some type of beans or edamme for protien source. Crisped polenta with a saute` of mixed vegetable with a tomato sauce , or even a vegan veloutte would suffice, garnish with herbs and a grated soy cheese. Do you have any specific requirements for this recipe? Does it have any time restraints or limited ingredients? Let us know and perhaps we can come up with better ideas!
