Some of the posts and comments I must say surprised me as we never have had a problem having delicious vegetarian food overseas. I guess it depends where you go. I love cooking and entertaining. Our whole family is vegetarian. We also maintain an organic garden and my sister has chickens for the eggs only. Here are some ideas for the person who requested French vegetarian entrees. Ratatouille and grilled polenta cakes from Provence. Coucous ( i know it is originally african) but is prepared widely in France. You can subsititute The vegetarian Chorizo for the merguez. Or mediteranean grilled vegetables served with coucous. Vol au Vent with wild mushroom, you can add veggie chicken, served in a puff pastry, the sauce is like a bechamel but you prepare with wine and stock instead of milk. You can serve fresh asparagus on the side, with bearnaise sauce, or a fresh herbs sauce. Quiches.( spinach, mushrooms, leeks, provencal etc) Alsatian onion tarte, any kind of tartes All kind of different gratin, you can use fake bacon in some of them too for extra flavors.Endive gratin is very good.or fennel. Stuffed crepes ( mushrooms, asparagus,artichokes, leeks etc) Eggplant napoleon with tomatoes basil and goat cheese, you can serve it with fresh herbs rice pilaf or saffron rice. Portobello mushroom napoleon. Stuffed grilled portobello. Roasted vegetables with grilled portobello with a burgundy, red wine sauce , gratin or truffled mashed potatoes ( use truffle oil) Vegetarian beef bourguignon. Wild mushroom rissotto. Stuffed zucchini, tomatoes, peppers etc. Fresh pasta with provencal vegetables. Paella.( spanish but prepared often in Provence) Provencal Mushroom and white bean stew. Vegetarian Cassoulet. Mushroom or vegetables mille feuilles. Pissaladiere without anchovies. Pizza ex caramelized onions, roasted garlic and roquefort. Soufles ( brie, asparagus etc). Croque Monsieur.( subsitute ham with mushrooms) Raquelette with bread, vegetables and potatoes. I hope these ideas will be helpfull.
