Looking for Black-Bean & Rice Mexican type recipe

I am not a vegetarian. At least I don't think I am. I simply find

that as I have grown older I have much less desire to eat meat.

 

A friend of mine who is Vegan and with whom I am no longer in contact

(college days). Made two dishes that I miss terribly and cannot make

a good copy of.

 

The first was a mexican style casserole of brown rice, black beans,

corn, peppers, tomatos amd tomatillos. She tolerated letting us put a

dollop of sour cream and sprinkled monterey jack cheese on it.

 

The second was a mixure of fresh roma tomatos and some kind of

squash, summer, zucchini, whatever you could find with other various

and sundry fresh vegetables. I can't get the order or the time right,

either the carrots are too crisp or the tomatos too mushy, and I

can't get the herbs right!

 

I know this is a very long post, but I live in Durham NC, and can't

find Bavarian style sauerkraut anymore. You know the sweet stuff with

caraway seeds in it?

 

I love it with a nice stiff bread like the English toasting bread I

find around here that remins me of polgacha (aneaster european

flatbread.

 

And while I am rolling out my wish list, does anyone have any

receipes that use Stouffer's frozen creamed spinach? Boy, that's good

stuff. I've though about putting it in some pastry dough and baking

it.
