I have high cholesterol, and feel that this group will be able to help me, with more good veggie recipes! I have some questions about being a vegetarian. Is dairy okay, like ice cream and skim milk. Guest guest Posted May 7, 2004 Report Share Posted May 7, 2004 Patricia, Vegetarians may eat dairy and eggs, however, in light of your cholesterol problem, lowfat dairy and few to no eggs would be advisable. None of us will tell you what to eat and what not to eat. The fish debate is hot on the list right now.. haha , but most of us feel that vegetarians ( true vegetarians) do not eat fish. That is up to you..and not important for your concerns... I think what is important for you is not necessarily the " rules of vegetarianism " but rather a low cholesterol diet. Good for you for being willing to make that change. Patricia, if you have high cholesterol, I would say ice cream is a no-no, as is cheese. Skim milk is ok, and egg about once a week- or use egg beaters if you love eggs so much, and Fish is good for you as long as it is prepared in a way thatdoesn't add cholesterol and fat. Fish is also quick and easy , so it is a good alternative and a little easier for your transition into vegetarianism. If you really want to lower your cholesterol, focus on whole grains, fruits and vegetables and lean protein such as beans, lentils, tofu, etc..steer clear of processed foods. You can do it!! Also, there is evidence that sugary foods raise triglycerides and can affect your cholesterol- I have read in the past. This winter I was on a diet that severly restricted sugar, but I ate butter like you wouldn't beleive..My cholesterol dropped very low ( though I never had a problem anyway..) I'm not sayign go nuts on butter- just realize that junk food, even if it is fat-free- can be sugar laden and can affect your health and sabotage your best efforts to be healthy. I can vouch for this as when I last had a cholesterol test I was told my profile was excellent. I was vegan for years and have avoided cheese and eggs since 2001 when my doctor advised me about my cholestrol being too high. When I stopped eating cheese and starting eating more flax [grinding it in a coffee grinder and adding to cereal], my health went back to normal and lost 10 lbs. Since I live in an area that caters to vegetarians, it's easy to get n.yeast, good syrups, etc. besides veggie fast foods but find it possible to do well with a little creativity. I've been on this list for awhile, but don't post a whole lot, so I guess you could say I'm a lurker. :-p I became a vegetarian last August and at first was eating LOTS of white rice and soda crackers. I ate soda crackers because my tummy felt yucky and I ate them with a soda pop to try and feel better... on those days I also ate lots of top ramen noodles. So, all that to say, my cholesterol went down, but my triglycerides went up! I was wondering why, since I became a vegetarian... I did some research and found that eating simple carbs made my triglycerides go up... so I cut that out immediately! In 2 months my cholesterol went down from 271 to 257 and then when I had it checked again a month later they had gone down to 114! I was shocked, but very pleased! ))) I've also learned since then that being overweight (I'm actually considered obese) can cause triglycerides to go up and hdl cholesterol (the good) to go down, but as a person loses weight the triglycerides will go down and the hdl will go up. ) I have still eaten ice cream and cheeses... but sparingly... I really think that it's the simple carbs we have to watch because those convert to fat! I feel so much better being a vegetarian! Oh... I still eat fish too. ) And I have learned to LOVE tofu. A great cookbook is Giant Book Of Tofu Cooking. There is an awesome veggie lasagna recipe in there... and tofu sloppy joes... and so many more I want to try... anyway... I ramble!
