Tomato-Mustard Dressing

2 cups low-sodium tomato juice

2 TB white wine vinegar

1/4 ts dry mustard

1 clove garlic -- minced

1/4 ts dried basil leaves

2 ts onion -- minced

1/4 ts black pepper

 

[1]Place tomato juice, white wine vinegar, dry mustard, garlic, basil, leaves,

onion, and black pepper in a blender or food processor and process until

ingredients are well combined.

Description:

" Try substituting this multi-accented dressing for French dressing on vegetable

salads. Chill before serving to allow the flavors to mingle. "

 

Notes: Yields:8 (1/4 cup) servings. Prep time: 10 minutes plus chilling time "

1/2 cup nonfat cottage cheese

1/4 cup pickle relish or finely chopped sweet pickles

1 ts Dijon mustard

 

[1]Place tomatoes, cottage cheese, relish, and mustard in a blender or food

processor and process until creamy.

 

Description:

" Use this dressing as a substitute for Russian dressing on vegetable salads

garnished with hard-cooked egg whites, if desired. "

1/2 ts caraway seeds

1/2 ts dried dill leaves

2 ts onion -- minced

1/2 ts sugar

 

[1] Place yogurt, wine vinegar, garlic, caraway seeds, dill leaves, onion, and

sugar in a bowl and mix until well combined.

[2] Chill for 1 hour.

 

Description:

" Try this dressing with potato or vegetable salads. It tastes best when served

[1] Place yogurt, lemon juice, horseradish, Dijon mustard, paprika, garlic, and

onion in a bowl and mix untill well combined.

[2] Chill for 1 hour.

 

Description:

" Lemon juice and horseradish are combined with Dijon mustard, paprika, garlic

and onion in this yogurt dressing. Serve chilled with raw vegetable salads. "
