Parmesan-Mustard Dressing

1 cup nonfat buttermilk

1/4 cup nonfat sour cream

1/3 cup nonfat mayonnaise

1 TB nonfat Parmesan cheese -- grated

1 TB fresh parsley -- chopped

1 clove garlic -- minced

1 ts onion -- minced

1/4 ts dry mustard

 

[1]Combine buttermilk, sour cream, mayonnaise, Parmesan cheese, parsley, garlic,

onion and dry mustard in a bowl.

 

[2]Cover and chill for 1 hour.

 

 

Description:

" This buttermilk dressing is accented with nonfat Parmesan cheese, garlic,

parsley, onion, and dry mustard. Serve with a salad of spinach, apple slices and

steamed potatoes.Yields: 4 (1/3 cup) servings. Prep time: 15 minutes plus 1 hour

chilling time. "

2 cups plain nonfat yogurt

4 TB lemon juice

2 ts Dijon mustard

 

[1]Line a small colander with a coffee filter or several layers of clean, dry

cheesecloth. Place the yogurt in the colander and allow the liquid to drip into

a bowl for 3 hours. Discard the liquid.

 

[2]Combine the drained yogurt, lemon juice, and mustard.
