Tomato Herb Dressing

1/2 cup red wine vinegar

3/4 cup low-sodium tomato juice

1/4 ts dried oregano leaves

1 TB scallions -- chopped

1 TB fresh parsley -- chopped

1 clove garlic -- minced

1/4 ts black pepper

Pinch of cayenne pepper

Pinch of sugar

 

[1] Place the wine vinegar, tomato juice, oregano, scallions, parsley, garlic,

black pepper, cayenne pepper and sugar in a jar with a tight-fitting lid and

shake until thoroughly mixed.

 

Description:

" This dressing is accented with red wine vinegar, oregano, scallions, parsley,

and cayenne. Try it on a salad of broccoli, asparagus tips, snow peas, nonfat

Swiss cheese strips, green bell peppers and onions. "

1 cup rice vinegar

1 ts light soy sauce

1 slice fresh gingerroot -- cut in several pieces

 

[1] Combine garlic, rice vinegar, gingerroot, and soy sauce.

[2] Let stand for 45 minutes.

[3] Strain dressing. Discard garlic and ginger.

 

Description:

" This dressing features rice vinegar and low-sodium soy sauce infused with the

flavors of ginger and galric. It goes well with a salad of mixed greens and

fruit. "

Cottage Cheese - Dill Dressing

1/3 cup nonfat buttermilk

1/2 cup nonfat cottage cheese

1 TB lemon juice

1 TB nonfat Parmesan cheese

1 scallion -- chopped

1 clove garlic -- minced

1 TB fresh parsley -- chopped

1/2 ts dried dill

1/4 ts black pepper

 

[1] Combine buttermilk, cottage cheese, lemon juice, Parmesan cheese, scallion,

garlic, parsley, dill and black pepper in a food processor or blender. Process

until smooth.

[2] Chill in a covered container for 4 hours before serving.

 

Description:

" This creamy ranch-style dressing is made with nonfat buttermilk, nonfat cottage

cheese, and nonfat Parmesan cheese. Serve with mixed greens, plum tomatoes and

sliced mushrooms. "

Notes:

" Prep time: 15 minutes plus 4 hours chilling time. Variations: Substitute 1/3

cup nonfat plain yogurt for cottage cheese. Delete Parmesan cheese and dill. Add

2 TB apple cider vinegar and 2 TB honey. "
