Veggie Pick Me Up

48 oz canned low sodium vegetable juice such as V8

1 cup fresh or low-sodium canned tomatoes -- chopped

2 TB celery -- chopped

2 TB cucumber -- chopped

2 TB lemon juice

2 TB lime juice

1 TB onion -- chopped

2 TB green bell pepper -- chopped

2 TB carrots -- chopped

2 TB fresh parsley -- chopped

1 ts dried dill leaves

2 cloves garlic -- minced

 

[1] Pour 1 1/2 cups of the vegetable juice coctail into an ice cube tray and

freeze.

[2] When cubes are frozen solid, place the remaining vegetable juice, tomatoes,

celery, cucumber, lemon juice, lime juice, onion, green pepper, carrot, parsley,

dill and garlic in a food processor or blender and puree.

[3] Serve vegetables pureed over frozen cubes.

 

Description:

" This lively mixed vegetable drink is served over tomato-juice ice cubes. Season

with hot pepper sauce and garnish with a slice of lemon or lime. "
