Chinese and Japanese Tofu, was Mattar Tofu

The tofu packages aren't labeled with which type they are. Chinese tofu is the

stuff packed as a block in a container of water, often in the produce section.

Japanese tofu is the stuff packed in aseptic cartons on the shelf. The Japanese

tofu has a smoother texture but it's softer, better for scrambling and stuff.

 

You won't go far off if you get the wrong kind; it's just a little easier to

handle firmer tofu for the Mattar Tofu recipe.
