Guest guest Posted May 9, 2004 Report Share Posted May 9, 2004 This is a side dish, but it has 9 grams of protein. * Exported from MasterCook * Brown Rice, Peas and Pine Nuts Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Chapt:Side Dishes Diet:Vegan Diet:Vegetarian Ing:Nuts Ing:Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup pine nuts 4 1/4 cups vegetable stock -- boiling 2 cups short-grain brown rice 1 cup green peas -- cooked 3 tablespoons fresh chives -- chopped 3 tablespoons fresh thyme -- crumbled 1 teaspoon granulated garlic Place pine nuts in a small dry saucepan, and toast ovr medium heat, shaking pan constantly for 2 to 3 minutes or until nuts are lightly browned. Set aside. Combine stock and rice in a medium saucepan, bring to a boil, cover, reduce heat to low and cok for 40 minutes or until liquid is absorbed. Remove from heat and fold in green peas, chives and thyme. Stir in garlic.
