Hi Everyone!

 

I've lurked here on and off for quite a while now and have tried many

of your recipes. I'm a total novice cook though, so don't really have

any recipes of my own to contribute.

 

My question is about how to spice up soups. I've tried making some

vegetable/pasta and bean soups, but they never seem to have enough

flavor. I've had many vegetarian soups and they all have waaayyy more

flavor than mine does. I'm love spicy foods too, so don't be afraid

to suggest something with lots of flavor!

 

Any suggestions?

i make soup by a huge kettle full.

 

for lentils and vegies, i use 1/2 to 3/4 cup of tamari,

as well as rosemary and garlic (dried)

 

for split pea soup, i often use 1/2 c of curry,

dried dill or caraway seeds are good too (about 1T)

 

besides vegie broth (which i don't use, too expensive) Dark or Red Miso work

well.

 

for chile, i not only use chili powder and paprika

and a little hot sauce, but also a package of taco seasoning,

really brings alot of flavor.

 

i buy spices at our co-op (Natural Farms drops our groups order off in a semi

once a month)

by the pound, they keep will in a dark shelf in old spagetti sauce/instant

coffee sort of containers.

try veggie or mushroom stock cubes

try to make sure no msg

it really makes them flavour stand out

maybe a pinch or two of chilli

Here is the base for most of my soups, onoin, celery, garlic.

Bay leaf,Basil,lots of Garlic powder(I like garlic, it will also add

a little spiceness to it),Greek seasoning,Blackend seasoning(spice it

up a little),Cracked black pepper,salt, Sometimes depending on the

soup you can use a lipton soup mix but they tend to be a little salty

if you use it I would only use half of the french onion one. I have

found for me the key to seasoning soup is to be carefull not to add

to much salt and not to be afraid to add some seasonings. It also

depends on your stock you can buy vegetable stock instead of just

water. I'm not a vegetarian so I use chicken stock for alot of my

recipes.

--- I use a lot of vegetables for soup stock. Also Basically we grow

these so in the fall i make little " soup starter " packages and freeze

them. Each contains: A small wedge of savoy cabbage, a leek, a piece

of celery root or a stalk of celery, a parsnip and a carrot.

Sometimes i add a turnip too, or put a turnip instead of the cabbage.

I've also seen these in our supermarket sometimes.

 

When i make soup, i start by cooking these along with some allspice

and a bay leaf. Then i add all the other soup ingredients (depending

on what the soup is)and sometimes other spices (basil, fresh parsley

(the dried stuff to me has no flavor; it tastes like hay) marjoram,

summer savory etc. But here it depends on the type of soup i'm

making.

Salsa is a really good seasoning for vegetable or tomato based soups. Fresh

herbs as opposed to dried ones offer more flavor and aroma as well. My favorite

for most kinds of bean soup is some good ole cayenne pepper sauce.
