I took the advice of the original poster and did not use butter (just sprayed the dish). I think next time I would add a bit a cheese that has a little zip like feta or parmesan. It would also be good with pepper jack or some hot sauce. Does ANYONE want to take credit for this recipe or have the source? Jamie * Exported from MasterCook * Spinach And Cheese Squares Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 Cup butter or margarine* 1 Cup flour 3 eggs 1 Cup milk 1 Teaspoon salt 1 Teaspoon baking powder 1 Teaspoon dry mustard 20 Ounces frozen chopped spinach -- thawed -- squeezed dry 8 Ounces mozzarella cheese -- shredded 8 Ounces cheddar cheese -- shredded Melt margarine in a 9 x 13 baking dish in the oven. In large mixing bowl, combine flour, eggs, milk, salt, baking powder and mustard. Mix well. Add spinach and cheeses, pour into pan. Bake at 350 F. for 30 minutes. When set, cut into squares and serve warm. Can be reheated. NOTES : You may want to melt the margarine in a small bowl in microwave or in a small saucepan on the stovetop. Made this for dinner and it was great! Original recipe calls for melting 1/4 C butter in baking dish. Think next time, I'll save the fat calories and just spray with Pam! - - - - - - - - - - - - - - - - - - NOTES : *To cut down on the calories, you can also just spray the dish with Pam rather than melting the butter in it.
