Guest guest Posted August 16, 2004 Report Share Posted August 16, 2004 * Exported from MasterCook * tagine of mixed vegetable - moroccan vegan Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 large potatoes peeled and chopped into 2cm cubes 2 medium turnips peeled and chopped into 2 cm cubes 3 medium carrots peeled and cut into 5 x 25mm batons 4 medium zucchini halved and cut into 15mm lengths celery cut diagonally in 1.5 cm 1 large onion chopped into 15mm cubes 1 1/16 quarts water 6 cloves garlic 2 tabledspoons olive oil 1 small red chillie chopped 1 teaspoon ground cumin 2 tablespoons finely chopped flat leaved parsley 1 medium onion chopped finely Prepare potatoes and turnips carrots zucchini celery and onions. In a large heavy based pan bring water to boil. Add potatoes turnips carrots zucchini celery onion and garlic cloves. Cook vegetables until tender about 15 20 minutes (see Note) Heat oil in small pan and cook chilli cumin parsley and chopped onion over medium heat for 5 minutes. Add onion mixture to the boiled vegetables and their liquid and cook for about 10 minutes or until liquid has reduced and onion is cooked. Serve immediately. Note: As zucchini cooks more quickly than other vegetables remove from liquid with a slotted spoon after about 8 minutes. Add to pan with other vegetables.
