I want one without meat (obviously hahaha) but also I do not want any noodles added to it either. So does anyone know of any tried and true recipes for Miso Soup? They're low in salt, too, so you may have to salt them to taste if you're not watching salt intake. I sort of throw miso soup together. Use two cups of water or vegetarian broth, a slice of ginger, kombu (if you like it), some chopped scallions and some bok choy, napa or head cabbage. Bring to a boil and let it simmer a few minutes, then stir in some dark miso (I use a fat tablespoon's worth). Serve. It takes no time at all. I also add noodles to it when I'm in the mood for supper. Guest guest Posted October 2, 2004 Report Share Posted October 2, 2004 When I make misco soup, I put any vegetables into it that are available as well as some dried soup mix. I us vegetable stock or water add a bit of garlic and herbs. Then when it's been cooking for a while I add a couple of tablespoons of misco (Which has been disolved in hot water)just before serving.
