Guest guest Posted September 4, 2004 Report Share Posted September 4, 2004 Dear Veg Recipes group: I am writing to you in my capacity as research librarian for the System Reference Center, which supports the reference desks of the public libraries in the greater San Francisco Bay Area. The SRC attempts to answer unusual or difficult questions that cannot be answered using local public library resources. We've been asked to find a recipe (better yet more than one) for soy cheese made from soy milk (as opposed to agar agar), and NOT a recipe for tofu. Apparently, a number of recipes for " soy cheese " turn out to actually be for tofu, and the library patron looking is getting a little frustrated. I've found a bunch based on agar-agar and tahini, but nothing based on soy milk. Before I try contacting places like the Soy Council, I'd like to know if anyone on this group can come up with a recipe or two. Many thanks in advance, and any comments or suggestions you can give us regarding additional resources we can try would be greatly appreciated. Thank you for your time. Guest guest Posted September 7, 2004 Report Share Posted September 7, 2004 Hi Sallie Wow, what an undertaking.. i'm sure we're all waiting for the results ;-) i don't know about everyone else.. but i've never tried to make veggie or soy cheese. What i do to achieve " cheesy-ness " in a recipe is add nutritional yeast flakes to it, along with soy milk or tofu. For example.. Macaroni & " Cheese " .. is made with a traditional white sauce, subbing soy margarine & milk for the fat and dairy products, with the addition of nutritional yeast flakes to give it a " cheesy " quality. So i'm guessing this cheese recipe would have to include it. It's an interesting concept for sure, to make your own cheese from soy. Honestly when i first became a vegan around 1993, the " vegan cheese " out there was so bad it wasn't worth the effort to even consider.. but the last decade has changed that tremendously and i even enjoy " grilled cheese & bacon sandwiches " these days with American veggie slices and Morningstar Farms veggie breakfast stripes.. ahhhhh the tastes of youth.. yummmmmmmmmmmmmmm. :-) i wish you tremendous luck in your search. shazadi Quote Link to comment Share on other sites More sharing options...
