Guest guest Posted September 13, 2004 Report Share Posted September 13, 2004 * Exported from MasterCook * Avocado Soup Recipe By : Cari Rowland Serving Size : 6 Preparation Time :0:20 Categories : Soups & Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 C Onion -- Chopped 1 Tablespoon Butter 2 Cans Vegetable Broth 2 Med Potato -- Peeled And Cubed 1/2 Tsp Salt 1/4 Tsp Pepper 2 Med Ripe Avocado -- Peeled And Quartered 1/2 C Sour Cream 1/4 C Seasame Seeds In a large saucepan, saute onion in butter until tender. Add the broth, potatoes, salt and peeper; bring to a boil. Reduce heat; cover and simmer for 15-25 minutes or until potatoes are tender. Remove from the heat; cool slightly. Place avocados in a blender; add potato mixture. Cover and puree. Return to the pan; heat through. Garnish with sour cream and sesame seeds. - - - - - - - - - - - - - - - - - - NOTES : This is a deliciously different use for avocados with this warm, rich and creamy soup.
