Guest guest Posted September 13, 2004 Report Share Posted September 13, 2004 * Exported from MasterCook * Fiesta Chopped Salad Recipe By : Merwyn Garbini from Tucson, AZ Serving Size : 8 Preparation Time :0:30 Categories : Casseroles Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Med Sweet Red Pepper -- Chopped 1 Med Sweet Yellow Pepper -- Chopped 1 Med Tomato -- Seeded And Chopped 1 Med Cucumber -- Seeded And Chopped 1 Sm Zucchini -- Chopped 2 Green Onion -- Chopped 2 Tbsp Olive Oil 1 Tbsp red wine vinegar 1/2 Tsp Sugar 1/4 Tsp Salt 1/4 Tsp Pepper 1 Lg Ripe Avocado -- Peeled And Chopped 1 Tbsp Lemon Juice In A large bowl, combine the first seven ingredients. In a jar with a tight-fitting lid, combine the oil, vinegar, sugar, salt and pepper; shake well. Drizzle over vegetables and toss to coat. Toss avocado with lemon juice; sprinkle over salad.
