Fiesta Chopped Salad

Amount Measure Ingredient -- Preparation Method

1 Med Sweet Red Pepper -- Chopped

1 Med Sweet Yellow Pepper -- Chopped

1 Med Tomato -- Seeded And Chopped

1 Med Cucumber -- Seeded And Chopped

1 Sm Zucchini -- Chopped

2 Green Onion -- Chopped

2 Tbsp Olive Oil

1 Tbsp red wine vinegar

1/2 Tsp Sugar

1/4 Tsp Salt

1/4 Tsp Pepper

1 Lg Ripe Avocado -- Peeled And Chopped

1 Tbsp Lemon Juice

 

In A large bowl, combine the first seven ingredients. In a jar with

a tight-fitting lid, combine the oil, vinegar, sugar, salt and

pepper; shake well. Drizzle over vegetables and toss to coat. Toss

avocado with lemon juice; sprinkle over salad. Serve with a slotted

spoon.

NOTES : Nutritional Analysis: One serving (1/2 cup) equals 91

calories, 7 g fat (1 g saturated fat), 0 cholesterol, 81 mg sodium, 7

g carbohydrate, 2 g fiber, 1 g protein. Diabetic Exchanges: 1-1/2

fat, 1 vegetable.
