called " The Art Of Indain Vegetarian Cooking " by Yamuna Devi.

It is amazing, all vegetarian with ever dish out of it incredible!

You can buy it on amazon i'm sure. Every time I make any recipe

from it I get huge compliments1

Paneer

 

1 Litre skim milk

Juice of 1 lemon or 1 cup curds

 

Put the milk to boil. When it starts boiling, remove

from the heat and wait for 2 to 3 minutes. Then, add

the lemon juice and stir gently till all the milk

curdles. Leave covered for some time. Then, pour

over a thin muslin cloth and drain out the whey.

Cover with a cloth and place a weight on top to drain

out the water.

 

Note: Use of curds gives smoother paneer.

I recently bought Sundays at Moosewood from the Moosewood collective, and it has

a full section dedicated to recipes from India, including several indian

cheeses. I now own 3 Moosewood cookbooks and absolutely love them. I got all

mine used at Powells.com.

Are there a lot of vegetarian recipes in the book or are the recipes

easily substitutable?

Just got back from the library with " The art of Indian vegetarian cooking :

Lord Krishna's cuisine " by Yamuna Devi. It has extensive treatment of milk

products with detailed directions on how to make yogurt, yogurt cheese, Panir

cheese, Chenna cheese, curd cheese, etc. You should definately check it out.

We

are thinking about planning a completely Indian Christmas dinner...just for

something different and fun!

*****I posted this awhile ago!! Seriously this is the only book to

own if you want indain vegie food. It is my bible and every recipe

is wonderful!! I hope who ever wrote the original thread has/will

try this.
