The recipe is from Colleen Patrick-Goudreau who is the founder of Compassionate Cooks (google her for more info - she is an animal rights activist by way of offering vegetarian cooking classes, and she wrote The Joy of Vegan Baking). Enjoy! Becky 1/2 tablespoon olive oil (or use water to saute) 9 cloves garlic, minced or crushed 1 yellow onion, diced 1 bunch kale, chopped into bite size pieces (use any kind of greens) 6-8 cups veggie stock or water 4 small potatoes chopped into bite size pieces (yukon gold and red) 1 tablespoon rice vinegar salt and peper red pepper flakes Saute onions in olive oil for about 10 mins until they start to caramelize. Add the crushed garlic and saute for another few minutes until it turns golden. Add the kale and potatoes and stir. Add broth or water. Cover and simmer for 25 minutes or until potatoes can be pierced with a fork. Salt and pepper to taste. Sprinkle the rice vinegar right before serving. (I used to hate greens, but now .. . . Go figure!). I shall therefore be making this one soon!
