Guest guest Posted November 12, 2008 Report Share Posted November 12, 2008 Hello, I'm Jennifer (Jenn or Zombie if you prefer) and I live in San Diego, California with my husband and pets. I am twenty-nine and was told last year that due to a kidney condition I need to eat a vegetarian diet that is also low in salt. The last year has been a series of fits and starts. While I do feel great eating fresh and healthy food and even physically better as my kidneys started to not hurt for the first time in ages ... I am a full-time student, a part-time teacher, a writer and in addition to my family commitments my husband and I are also adopting so I am way to busy to prepare these vegetarian meals that require a million ingredients and more than an hour of prep and cook time. More often than not I fall back into the habit of drinking a Coke and munching from muffin or cookies for dinner. So I'm really hoping to find support from people who have experience cooking vegetarian meals on a daily basis (as opposed to the library of cookbooks I rushed out and bought that don't provide practical everyday menus) and to find motivation to loose weight (which I undoubtedly need to do as I'm also thirty/forty pounds overweight).
