I'm new and here's one of my favorite recipes

I just wanted to introduce myself. My name is Jackie, and I am a

chubby vegetarian. I used to be much healthier, but I unfortunately

started some bad food habits by eating a lot of unhealthy and fatty

vegetarian foods (french fries, chocolate, pizza, etc). I started a

blog yesterday to journal my meal-planning, recipes, and trials with

once-a-month vegetarian and vegan cooking. Hopefully, if I force

myself to write down and reflect on what I am eating, I will make

better choices.

 

I am already excited by all of the great info and recipes I found in

searching your old posts and in the files section. I look forward to

contributing to this community and supporting other vegetarians as we

aspire to a healthier lifestyle.

P.S. Here is one of my favorite recipes (I modified it a bit from a

Woman's Day magazine recipe); I even had it for dinner tonight:

 

Festive Veggie Fajita Wraps

FOR THE FILLING:

1 1/2 cups edamame

1/2 cup chopped red onion

1/2 cup chopped green bell pepper

1/2 cup chopped red, yellow, or orange bell pepper

1 chili pepper, cored (seeds and ribs removed)

2 tablespoons lime juice

2 tablespoons chopped fresh cilantro

1/2 teaspoon chopped garlic

1/4 teaspoon cumin

 

Optional:

1/2 cup fat-free soy cheddar cheese mixed with filling

sprouts for garnish

salsa for garnish

 

FOR SERVING:

8 vegan corn tortillas or flour tortillas

 

Combine filling ingredients and mix well.

 

Spoon filling into shells and top with sprouts. Warm filled shells in

oven at 375 degrees for 10-15 minutes.

 

Serve fajitas with salsa.

I'm glad you've found our information helpful already. Your recipe sounds good.

I throw together veggie fajitas quite often myself and cumin is a key

ingredient!

Absolutely, Pam! OR, at least, that's why we came here in the first place - ie.

being vegetarian and being chubby - although some might since have stopped being

chubby and continue here because it's such a nice group :)
