I'm glad to see there's spreading awareness of the issue. I note that

Arturo posted a comment on your blog on preparing raw, sprouted beans,

and never having a problem. The research I have conducted suggests

that sprouting also inactivates the lectins in beans, grains, and

other seeds.

 

Interestingly, when I made lima beans the other day, I only soaked

them overnight (also important to reduce lectins) and they sprouted.

Those must have been some fresh beans!

Thanks, Pam - I remember hearing about that way back when but had forgotten :(

Nevertheless, I did remember there was a good reason to soak, boil briskly and

only then to slowcook kidney beans! Now I know what it is.

 

A good site too.

Similar to food poisoning.

 

" Onset of symptoms varies from between 1 to 3 hours. Onset is usually

marked by extreme nausea, followed by vomiting, which may be very

severe. Diarrhea develops somewhat later (from one to a few hours),

and some persons report abdominal pain. Some persons have been

hospitalized, but recovery is usually rapid (3 - 4 h after onset of

symptoms) and spontaneous. "

Other beans have lectins too, but not as high as kidney beans. The

lectin in fava beans and others can cause major problems for those of

European descent (G6PD or favism), resulting in accute anemia or even

death without a blood transfusion.

 

Lectins are in all plant and animal foods, but there are certain ones

that are very toxic to humans (eg. ricin or castor bean lectin), some

that cause food intolerances (implicated in some celiac disease,

intolerances to soy, corn, legumes, peanuts, etc.) or illness (like

the kidney bean lectin) and some that are implicated in auto-immune

disease (such as nightshade lectins in arthritis, and dairy lectins in

diabetes).

Well, I lost 5 lbs over xmas.  Thank you to my youngest daughter who gave me the

flu on xmas day and it took a week to get rid of.

 

I also had minor surgery (carpal tunnel) on Dec 19 so was not able to do a lot. 

 

Only problem is, now that I am feeling better and the food is tasting better I

want to eat again.  I am making a lot of salads and soups.

Wow, Barb! That's quite a way to lose weight. You're not recommending it, I

guess? :) Good for you with the soups and salads - that's the way I'm going

mostly right now. Love both!

 

Btw, carpal tunnel syndrome is the pitz. Hope the surgery has worked well for

you!!!!

Congrats on the 5 pounds Barb (but sorry to hear about the flu being the

cause!).

Of course you want to eat, eating is good! In moderation of course. :-)
