I note that Arturo posted a comment on your blog on preparing raw, sprouted beans, and never having a problem. The research I have conducted suggests that sprouting also inactivates the lectins in beans, grains, and other seeds. Interestingly, when I made lima beans the other day, I only soaked them overnight (also important to reduce lectins) and they sprouted. Those must have been some fresh beans! Lectins are in all plant and animal foods, but there are certain ones that are very toxic to humans (eg. ricin or castor bean lectin), some that cause food intolerances (implicated in some celiac disease, intolerances to soy, corn, legumes, peanuts, etc.) or illness (like the kidney bean lectin) and some that are implicated in auto-immune disease (such as nightshade lectins in arthritis, and dairy lectins in diabetes). Thank you to my youngest daughter who gave me the flu on xmas day and it took a week to get rid of. I also had minor surgery (carpal tunnel) on Dec 19 so was not able to do a lot. Only problem is, now that I am feeling better and the food is tasting better I want to eat again. I am making a lot of salads and soups. Hope everyone has a great week.
