This week we bought Chayote Squash. ~~~~~~~~~~~~ I looked up many recipes, so it is easily found on the internet. " ~~~~~~~~~~~~ Today, I sliced one, as I would a zucchini squash and used a small amount of red pepper olive oil to sauté it. I added minced, whole green onion, one clove of garlic, also minced and 1/2 orange sweet pepper, sliced. After it was starting to brown a bit, I added water and salt covered it and let it stew off most of the liquid. It was soft, yet firm, if this is possible...not mushy, and tasted delicious! In the chayote squash there is a center seed area, but it went right in with the rest. I tasted it and it was mild vegetable raw. I believe this would be nice in a oriental stir fry and salads as well. Have you used chayote squash, and if so how did you add it to your menu? Barb K.
