Guest guest Posted January 21, 2004 Report Share Posted January 21, 2004 CARROT RICE CASSEROLE 1 medium onion, chopped 1/2 bell pepper, minced 1 cup water 2 cups cooked rice 2 cups finely grated carrots 2 Tbsp. flour 1 tsp. salt 1/2 tsp. garlic powder 2 Tbsp. yeast flakes 1/2 cup peanut butter Simmer onion and bell pepper in small amount of water. Combine all ingredients and spoon into a baking dish. (Shallow is best: ingredients should be about 1 " deep). Bake at 350 degrees for 45 minutes covered, then remove cover and bake 10 minutes.
