Guest guest Posted April 26, 2004 Report Share Posted April 26, 2004 Taco Soup 2 cans pinto beans 1 small can green chilies 2 cups water 2 cans stewed tomatoes 1 1/2 cups cooked rice 1/2 package taco seasonings (may use a mix or add individual spices) 1/3 cup chopped olives 1 can corn Cook the rice. Add remaining ingredients and heat completely. To serve, place some corn chips in a bowl. Ladle the soup over the top. Sprinkle with fresh cilantro and chopped tomatoes.
