Guest guest Posted April 26, 2004 Report Share Posted April 26, 2004 Tofu Croquettes and Tartar Sauce *This is my mom's recipe and has been in the family for nearly 40 years. A favorite!!! We used to fry these in alot of oil (or deep-fat fry) but now we form them into balls and place on a baking stone or cookie sheet and bake them. It reduces the calories and makes them healthier. Croquettes ~ 1 lb. tofu 1 oz. cashews 1 oz. pimento 1 oz. onion 1 oz. celery 1 oz. green pepper 1/2 tsp. garlic salt 3/4 tsp. seasoning salt 1/2 tsp. salt 1/2 tsp. brewers yeast (or flavoring like Kitchen Boquet) 1 Tbsp. Vegex, Marmite, or Savorex (check for gluten product in ingredients if gf) chicken-style seasoning to taste *You may be more generous with the vegetable ingredients. Mix together well. Form into patties or balls. Fry in hot skillet or bake on cookie sheet at 350 degrees until golden brown. Tartar Sauce ~ 1 Tbsp. onion 1 Tbsp. pepper 1 Tbsp. pimento 2 Tbsp. pickle 1 cup vegan mayonnaise 1 tsp. lemon juice salt to taste Mix ingredients together well. Use as a sauce for the croquettes.
