Guest guest Posted April 28, 2004 Report Share Posted April 28, 2004 Cool Caribbean Salad 1/2 cup dry lentils, rinsed 1 1/2 cups water 1 cup diced fresh pineapple 1/2 cup finely chopped cilantro, or to taste 1/4 cup finely chopped red onion Dressing 2 Tbsp. apple cider vinegar (or lemon juice) 1/4 cup fresh lime juice 1 tsp. minced fresh ginger 2 Tbsp. peanut oil 1/2 tsp. grated lime zest 1 clover garlic, minced 1/4 tsp. salt, or to taste Combine lentils and water in a kettle and bring to a boil. Reduce heat and simmer for about 20 minutes. Drain. Combine dressing ingredients together in a small bowl. In a serving bowl combine cooked lentils, pineapple, cilantro, and red onion.
