Guest guest Posted May 2, 2004 Report Share Posted May 2, 2004 Harvest Pudding Place 3 cups of water and l teaspoon of salt in a pan and bring to a boil. Mix 1 cup of yellow cornmeal into 1 cup of cold water. When water begins to boil, using a whisk, stir in the cornmeal/cold water mixture. Stir and let cook for maybe 5-10 minutes. Add 2/3 cup unsweetened macaroon coconut 1/3 cup liquid sweetener (maple syrup, agave syrup, etc.) 1 teaspoon vanilla Stir until blended in well. While above mixture is still hot, place in the blender and blend until very smooth and creamy. You can serve several ways: 1). line dish with grapenuts or granola mixed with 1/2 cup apple juice concentrate. Pour pudding mix on top and chill. It will thicken very nicely once it gets cold. Top with thickened fruit sauce and serve. 2). Pour blended pudding into a container and chill until thickened. When ready to serve, dish out into a bowl in which you've placed granola.
