Guest guest Posted September 9, 2006 Report Share Posted September 9, 2006 NO-SUGAR CINNAMON NECTARINE JAM WITH PINEAPPLE 3 pounds fresh nectarines 3 (6-ounce) cans unsweetened pineapple juice 1 cinnamon stick Rinse and cut flesh from nectarines with skin attached. Cut into 1/2- inch dice. Combine nectarine pieces with pineapple juice and cinnamon in a heavy, non-reactive 4-quart saucepan. Cover and bring liquid to a boil; uncover and simmer over medium heat until jam has thickened. This will take 15 to 20 minutes. As mixture reduces, begin to stir more frequently to prevent sticking. Off heat, remove cinnamon stick. Fill hot, sterilized jars to within 1/4-inch of the lips. Wipe rims clean, attach new lids, and screw caps on tightly. Process in a boiling water bath, submerged by 1 inch, 10 minutes. Makes 4 1/2 cups.
