Hi Carla,

 

I thought you may like to know about a few changes I made when I

cooked the roast for Christmas :

 

- I used an extra package of tofu and increased the other

ingredients accordingly (but not the stuffing), giving a

thicker " turkey " layer.

 

- I used half the stuffing from the recipe, and half an apricot and

pine nut stuffing for the other.

 

Served with " Cashew Gravy - 4 " (with a little chicken-style bouillon

added) and cranberry sauce - delicious !

Carla - I cooked this for Christmas and it is very nice, a little time consuming

but everyone ate it and enjoyed. The recipe you see does make a big 'turkey'

though!

Sorry LaDonna,

Don't worry about that tofu turkey roast. I found it. I kept trying and

eventually found it under mains -mock meats- then turkey's & roasts. Silly me

was looking under tofu. LOL thanks anyway. am going to try this one out.

Hi Julie - I remember you mentioning this one in the other forum. Yes....it

looks big on the photos, so perhaps do you think, is it worth halving the recipe

just to try it for the first time? Kim mentioned that there is a lot of

stuffing, maybe it might be worth halving that only but keep the turkey the

same. Am going to have a great time having a go at this.

Yes, it would be Carla. You will also 'refine' it to your tastes. I cooked it

as per the recipe, and it was way too much for us - some even went back for 2nd

helpings and I had a lot left over. We had 10 for Christmas lunch, and I think

the turkey would have comfortably fed twice as many people, at LEAST! When I

make it again, I thought I would try making it in a loaf, with layers of tofu

and stuffing so it wasn't so fiddly to make... but you will enjoy it - it was

very nice...
