Guest guest Posted February 2, 2006 Report Share Posted February 2, 2006 Hi Carla, I thought you may like to know about a few changes I made when I cooked the roast for Christmas : - I used an extra package of tofu and increased the other ingredients accordingly (but not the stuffing), giving a thicker " turkey " layer. - I used half the stuffing from the recipe, and half an apricot and pine nut stuffing for the other. Served with " Cashew Gravy - 4 " (with a little chicken-style bouillon added) and cranberry sauce - delicious ! Yes....it looks big on the photos, so perhaps do you think, is it worth halving the recipe just to try it for the first time? Kim mentioned that there is a lot of stuffing, maybe it might be worth halving that only but keep the turkey the same. Am going to have a great time having a go at this. I cooked it as per the recipe, and it was way too much for us - some even went back for 2nd helpings and I had a lot left over. We had 10 for Christmas lunch, and I think the turkey would have comfortably fed twice as many people, at LEAST! When I make it again, I thought I would try making it in a loaf, with layers of tofu and stuffing so it wasn't so fiddly to make... but you will enjoy it - it was very nice...
