I just got this recipe, but I haven't tried it yet.

First, I'm going to have to try and find gluten free

tamari or soy sauce.

 

Shepherd's Vegetable Pie

 

from " The Vegetarian Meat and Potatoes Cookbook " by

Robin Robertson

 

Ingredients:

 

2 pounds Yukon Gold potatoes, peeled and diced

1/4 cup regular or soy milk

2 tablespoons olive oil

1 medium size onion, chopped

1 medium carrot, chopped

1 1/2 cups vegetarian burger crumbles (or 3 chpped

veggie burgers OR 12

ounces tempeh or tofu..If using tempeh, poach it in

water for 10

minutes

first. If using tofu, saute it lightly in a little

tamari or soy sauce

first to give it some color)

1/2 cup frozen peas

1/2 cup frozen corn kernels (fresh when available)

1 tablespoon tamari or other soy sauce)

1 teaspoon minced fresh thyme

1 to 1 1/2 cups Good Gravy (recipe follows)

salt, pepper

 

Method:

 

Potatoes with salted water, bring to a boil. Reduce,

simmer, until

tender, 20-30 minutes.

 

Drain potatoes and return to pan. Add milk and mash

until smooth, then

season with salt to taste.

 

Preheat oven to 350. Lightly oil a shallow 1.5 quart

baking dish.

 

Heat 1 tablespoon oil in large skillet over medium

heat. Add onion,

carrot, cover and cook, until softened, 5-7 minutes.

Stir in crumbles,

peas, corn, tamari, thyme and 1 cup of the gravy,

adding up to 1/2 cup

more if necessary to moisten. Season with salt and

pepper to taste.

 

Spoon filling mixture into prepare baking dish. Spread

potatoes on top

and drizzle with remaining oil.

 

Baking until heated through and top is golden, 20-30

minutes. Serve

hot.

 

Good Gravy

 

In a small saucepan, combine 2 cups veg stock or

water, 2.5 tablespoons

tamari or other soy sauce, 1 teaspoon minced fresh

thyme and salt,

pepper. Bring to a boil. Reduce, whisk in 2

tablespoons cornstarch that

have been dissolved in 3 tablespoons water, and boil,

whisking, until

sauce thickens, about 1 minute. Slowly whisk in 1/4

cup regular or soy

milk; do not allow to boil. Taste to adjust the

seasonings. Serve hot.
